Reserved for true lovers of mature cheeses

They were made due to practical reasons; when in 2009 sales of existing distributors was unable to follow the increased production in the new Dairy, we decided to manage the unsold cheeses and to try offering them independently for the first time on the Croatian marker – as extra old cheeses. The market accepted them soon and today we separate best samples of cow cheeses Kolan and Težački sir, leaving them for prolongated maturation lasting at least 6 months.

Such cheese is additionally managed, turned around and oiled, with special attention. During the maturation process it loses up to the third of its weight, yet it gets a harder structure, and a stronger and sharper taste.

Extra old cow cheeses are winners of a number of international acknowledgements.
