Best Kozlar samples are selected and left for prolongated maturation, whereupon our cheese producers previously apply brown paraffin onto the cheese.
Such cheese is additionally managed, turned around and oiled, with special attention. During the maturation process it loses up to the third of its weight, yet such Kozlar has a harder structure, stronger and more prominent goat milk taste, while it preserves the tastefulness of the cheese mass.
This is a cheese for true lovers of a sharp, aromatic and artisan goat cheeses.
