	  <description><![CDATA[<p>At this year’s World Cheese Awards 2024/25, hosted in the Portuguese city of Viseu, Sirana Gligora showcased its exceptional craftsmanship, taking home three prestigious medals:</p>

<p>A gold medal for their Kolan cheese aged in wine must,<br />
A silver medal for their extra-aged Pag cheese (Paški sir), and<br />
A bronze medal for their Žigljen cheese aged in the pomace of Viška maraska cherries.</p>

<p>The 2024 competition set new records, with 4,786 cheeses from 47 countries assessed by 240 judges representing 40 nations. Among the judges were top industry experts, including cheese technologists, graders, chefs, buyers, and journalists. Over a rigorous three-stage evaluation process, the cheeses were judged on appearance, aroma, texture, mouthfeel, and flavor, earning points to secure bronze, silver, or gold medals.</p>

<p>This recognition reaffirms Sirana Gligora’s dedication to blending tradition and innovation, cementing their reputation as leaders in the global cheese industry. 	  <description><![CDATA[<p>We proudly announces that our Kolan cheese aged in olive pomace has won the prestigious three-star award at the recent Great Taste Awards competition. The judging took place this spring in London, and the official results have now been published.</p>

<p>Great Taste is the largest and most trusted global accreditation system for food and drink, providing a unique product evaluation that can result in an award of 1, 2, or 3 stars. These awards enhance consumer trust and commercial success for quality food and drink producers, raising awareness of their products on local, regional, national, and international levels.</p>

<p>This year, approximately 13,000 entries were received, and products were judged solely on taste and appearance, without any information about the brand or packaging.</p>

<p>Kolan cheese aged in olive pomace was rated as "outstanding," earning it three stars—the highest accolade that confirms its exceptional quality and taste. We thank the members of the jury @guildoffinefood for this outstanding achievement, as well as our customers for their continuous support.</p>

<p>In addition to Kolan cheese aged in olive pomace, which received three stars, the following were also awarded:<br />
Pag cheese and Smoked Goat cheese with two stars, and Hemp cheese and Kolan cheese with one star.</p>

	  <description><![CDATA[<p>Another great recognition for our Sirana - our goat cheese Kozlar was named runner-up among 1500 cheeses at the Global Cheese Awards!</p>

At the prestigious competition held in Frome, England at Global Cheese Award 2021, Sirana Gligora was the only cheese factory from Croatia and won as many as 6 medals.<br />
It should be noted that about 1500 cheeses took part in this year's competition, and only about 250 of them were awarded. One of our cheeses is the title of "Reserve champion"!</p>

<p>CheeseE Likotin (100% sheep's milk from the Lika area), Liburjan (cow's, sheep's and goat's milk), and Kozlar (100% goat's milk) are awarded gold, with Liburjan and Kozlar being the best in their category and one hundred percent goat cheese - Kozlar is the runner-up of the entire competition!</p>

<p>This is one of the biggest awards for our Sirana Gligora, considering that it is a specialized cheese competition. Also, this is an extremely valuable confirmation of the quality of this year's cheeses with goat's milk, which gives us an incentive for further progress and production of the same. <p>Tofu<br />
This is a soy product with high protein content, great as a substitute for fish, meat and poultry. Also, no low percentage of fat and carbohydrates, and a high percentage of protein - 100 g has about 150 calories, 10 to 20 g of protein (depending on the manufacturer), Very easily digested (95%), and protein apsorbtion&nbsp;is over 60%. It is rich in calcium, iron and B vitamins, and is also good as a source of potassium and phosphorus. We can find it in different variants as fresh tofu, silk, smoked and marinated. It is used to make tofunaise&nbsp;and spreads, as well as salami and sausages!</p>

Seitan&nbsp;<br />
Also known as "wheat meat" - a dish made from wheat flour and rich in protein. Specifically, we are talking about wheat gluten that is formed by rinsing starch from dough. Rinsing and cooking create a pure gluten-like texture similar to meat. Satan is a food used in the diet, like tofu, by vegetarians and vegans.<br />
100 g of fresh satan has about 147 kcal, 26 g of protein, 1.5 g of fat and about 6 g of carbohydrates. Of the minerals in satan, potassium, iron, magnesium and calcium are present.<br />
Since the main ingredient in seitan is gluten, this food is not recommended for people who are allergic or have an intolerance to this protein.</p>

Humus<br />
Hummus is made from chickpeas, tahini (sesame paste), parsley, garlic, olive oil and spices. Hummus is rich in protein, it is an ideal ratio of protein, carbohydrates and healthy fats. It is a good antioxidant and has a low glycemic index. It also does not contain gluten like seitan.<br />
100 grams of hummus contains; 166 calories: 9.5g fat, 8g protein, 14g carbs, about 6g fibre, rich in magnesium, iron, zinc, vitamin B6 and potassium.</p>

	  <description><![CDATA[<p>This year's cheeses from the wine drop were created in cooperation with the wineries Boškinac, Vina otoka Pag and Rizman!<br />
It is not big news that we have been making excellent cheeses from wine drop in the Gligora Cheese Factory for a long time now, however, for the first time, we are cooperating with a winery outside the island of Pag. So far we have affinated&nbsp;cheeses exclusively in the wine drop of the local wineries - Vina otoka Paga and Boškinac, and for this year's affinage, we also use the wine drop of the Rizman winery. From the Rizman winery, we learn that these are grapes from organic cultivation - The goals of organic viticulture are to maintain and increase the natural fertility of the soil by appropriate cultivation measures, and to avoid all those measures that are contrary to this goal, such as over-cultivation, herbicide use and easily soluble synthetic fertilizers.</p>

	  <description><![CDATA[<p>This year, Sirana Gligora attended two competitions in the world of cheese and food products - the World Championship Cheese Contest held in Wisconsin and the Great Taste Awards. The WCCC was held just before the lockdown and the following cheeses were awarded:</p>

<p>Best in class - Dinarski aged&nbsp;wine drop</p>

<p>Second prize - Žigljen aged in olive skins</p>

<p>Second prize - Likotin</p>

<p>Third prize - Kordunski cheese</p>

<p>Third prize - Kolan aged in wine drop</p>

<p>At the Great Taste Awards 2020, Gligora&nbsp;Pag cheese was awarded two stars, and Kozlar from the olive skins was awarded one star.</p>

<p>With this, we confirmed the continuity of the quality of Pag cheese and affinated cheeses because Likotin aged in olive skins&nbsp;last year won a maximum of three stars.</p>

<p>This competition (GTA) was founded in 1994 and is also known as the seal of excellence, the Guild of Fine Food’s Great Taste Award rewards above all taste, and all products are removed from the packaging before tasting. This year 144 judges were present, and among them are; food critics, chefs, caterers, retailers, producers, gastro journalists, journalists and influencers. All of the above have decided which products deserve one, two or three stars.</p>

<p>This year, more than 12,700 products were registered, and 5,294 products were awarded.</p>

<p>In addition to Sirana Gligora, 7 other representatives from Croatia participated, and Varžak Mediterra and Volim Ljuto should be singled out, whose products can be found in Gligora stores.</p>

<p>Here are the reviews of the judges for the awarded cheeses:</p>

<p>PAG CHEESE:<br />
“Pretty pale yellow in colour, with a beautiful thick orange rind - this cheese is certainly visually appealing. It has a fermented spicy aroma and a fresh scent of herbs. The texture is hard but not overly crumbly and melts in your mouth due to its high-fat content. The taste in the mouth is long-lasting, with good salinity and black pepper substrates. It is also an extremely creamy hard cheese, very tasty on the whole. "</p>

<p>“Visually pleasing and exciting crust. The texture is thick, pleasant, decomposes well in the mouth. There is a slight smokiness of this cheese which we found very intriguing. Satisfactory and balanced levels of salt and fruity notes are present. A great feeling of melting in the mouth and crystallization on the tongue. "</p>

<p>KOZLAR FROM THE OLIVE KOMINA:<br />
"Delicious goat's milk cheese, authentic look with pale yellow paste and rustically washed rind. It had a lovely natural, fresh, goat, grassy aroma. The pasta was firm and creamy, with a bit of crunchiness from lactate crystals, and the taste was complex, with a lot of nuts, sweetness, tenderness. "</p>

<p>"A firm, riped cheese with an attractive rind, an artisan look and a sharp ripe flavour. <p>Whichever you choose - you choose top-quality prosciutto from renowned producers. All these prosciuttos have either label of a protected designation of origin (Istrian) or a protected&nbsp;geographical indication (Krk, Dalmatian and Drniš) and this is a kind of confirmation of uniqueness and quality!</p>

<p>The taste of prosciutto depends on many factors, such as the breeding and nutrition of pigs from which prosciutto is produced, then salting and additional spices, which depend on the affinities of the producers, as well as the size or weight of pig leg and their adipose tissue.</p>

<p><strong>History</strong></p>

<p>Prosciutto began to be produced in Croatia with the expansion of the Roman Empire by transferring the knowledge and skills of processing and salting pork. Gradually, techniques and skills are passed from generation to generation and take on specific characteristics in different areas.</p>

<p>Mass production began after the end of World War II, and in the '60s, with the significant development of tourism, it became an almost common food product in Croatia.</p>

<strong>What are the basic differences in the preparation of prosciutto?</strong><br />
&nbsp;</p>

<p><strong>Smoking</strong></p>

<p>Istrian and Krk prosciutto does not smoke.</p>

<p>Dalmatian prosciutto is smoked according to the producer's estimate, while Drniš prosciutto is smoked between 45 and 60 days.</p>

<p><strong>Skin and adipose tissue</strong></p>

<p>Istrian prosciutto removes skin and subcutaneous fat, while Krk, Dalmatian and Drniš remain.</p>

<p><strong>Drying</strong></p>

<p>The drying process of Dalmatian and Drniš prosciutto lasts up to 2 months, Krk prosciutto 3 months, and Istrian prosciutto between 5 and 7 months.</p>

<p><strong>Maturation</strong></p>

<p>Dalmatian prosciutto matures up to 12 months, Krk min. 12 months, Drniš from 12 to 18 months, Istrian up to 18 months.</p>

<p><strong>Salting</strong></p>

<p>Krk prosciutto is salted with a mixture of salt and black pepper, and laurel and rosemary can be added to the mixture. Istrian prosciutto is salted with a mixture of salt, black pepper, onion, bay leaf and rosemary.</p>

<p>Dalmatian and Drniš prosciutto are salted exclusively with sea salt.</p>

<p><strong>Pressing</strong></p>

<p>In Istrian and Krk pressing takes a minimum of 7 days, in Drniš and Dalmatia from 7 to 10 days.</p>

<p><strong>Cutting prosciutto</strong></p>

<p>It is a real science to cut prosciutto and it differs from prosciutto to prosciutto.</p>

<p>It is definitely recommended to cut the prosciutto with a knife, slowly and in even strokes. Machine cutting is not desirable and is impossible to do it on the whole prosciutto with bones. If it is cut mechanically, it is also necessary to cut at the lowest speed so as not to heat the prosciutto and melt the fat. Prosciutto should be cut just before consumption.</p>

<strong>Leg weight</strong></p>

<p>In the case of Krk prosciutto, the weight of fresh ham must be at least 12 kg, and the finished product at least 6.5 kg.</p>

<p>In the case of Istrian prosciutto, the weight of fresh ham must be at least 13 kg, and the finished product from 6 to 8 kg.</p>

<p>In the case of Drniš and Dalmatian prosciutto - fresh leg must weigh at least 11 kg, and the weight of the finished product is not explicitly defined.<br />

	  <description><![CDATA[<p>The new season of Pag cheese production has started in Gligora Cheese Factory, and with it, the best ricotta&nbsp;in the world - Pag ricotta! Pag ricotta is a product obtained by cooking whey from sheep's milk of Pag sheep.<br />
The quality of Pag curd depends on the milk, which is ensured by the origin of the milk, but the secret also lies with the person who makes it. It takes experience, patience and a calm hand to make the curd perfect - not too hard, not too soft!<br />
Pag curd is a delicacy that is eaten fresh, within a few days of production. We can eat it immediately after opening the package, add "old-fashioned" just a little salt or sugar and with a piece of bread. It is great also when we add homemade jams and olive oil. We can also cook with Pag ricotta - various cakes, add it to various sauces and prepare the finest dishes!<br />
Production and availability are limited to the first half of the year when the season of milking and making Pag cheese takes place on the island of Pag.<br />

At the International Cheese Awards&nbsp;in Nantwich, UK, Paški sir from Sirana&nbsp;Gligora got a gold medal, the first place in a very strong category of hard sheep cheeses. This is the third time&nbsp;for Gligora&nbsp;Paški cheese at this prestigious cheese competition (first gold 2013 and the second in 2014), and cheese Kozlar made of 100% goat milk from the Dalmatian hinterland got a great third place (bronze) in the category of hard goat cheeses!<br />
The International Cheese Awards in Nantwich are the largest cheese competition&nbsp;with the longest tradition, and on 25th July this year, a total of 5,000 dairy products from 27 countries took part. "With this, Sirana Gligora has proved once more that it is among the best cheese producers&nbsp;in the world, almost every year we get the prestigious international medals for our cheeses and thus promote the island of Pag and Croatia in the world as a gastronomic destination."<br />

	  <description><![CDATA[<p>Sirana Gligora won 5 awards at this year's 34th World Cheese Awards held in Newport, Wales</p>

<p><br />
This year was a record year in terms of the number of registered cheeses - as many as 4,434 from 42 countries. 900 cheeses from all over the world. Cheeses were evaluated by 250 judges from 38 countries.<br />
It is also interesting how this year's WCA was supposed to be held in Kiev, Ukraine, however, because of the war, it was moved to Wales.</p>

The awarded cheeses of Sirana Gligora are:<br />
Super Gold - Stamped refined in Marasca pomace<br />
Gold - Pag cheese (ZOI)<br />
Silver - Pag cheese (ZOI) extra aged<br />
Silver - Stamped extra old<br />
Bronze - Smoked Chilli</p>

<p><br />
Having won the Super Gold award, Gligorin Žigljen from marasca&nbsp;was ranked among the 98 best cheeses (2.21%), which is also the greatest success of Croatian cheeses at this year's competition.</p>

<p>This year's overall winner of the competition is Gruyer AOP Surchiox cheese from Volderfultigen cheese, while Gorgonzola Dolce DOP from De' Magi cheese won second place.</p>
